Carminal Blanc
Fissured limestone permits deep penetration of the vine roots. Limestone pebbles scatter the vineyards.
Carefully hand harvested grapes are pressed whole.
20 % of the harvest is fermented, with battonage (stirring), in new 225 litre French oak barrels for 8 months. The rest is fermented in stainless steel vats to retain the freshness of the flavour and aromas.
Tasting Notes
A beautiful bright colour with golden highlights, Carminal blanc is distinguished by the originality and complexity of its aromas: reaching the nose first are fresh mineral notes, followed by hints of white peach, and then dried and exotic fruit (dried kumquat).
To the palate, Carminal blanc offers a high concentration of white peach with hints of honey, aniseed and aromatic herbs. The freshness of the exotic fruits is well balanced by the softness provided by the kumquat. The delicate tones of wood, butter and vanilla underpin the fresher top notes. The finish is fresh, straight forward and yet vibrant.
Heavily influenced by the Grenache blanc, Carminal takes us back to rediscover a palette of flavour and aroma oft forgotten. Derived from vines grown at altitude, the wine manages to combine the personality and vibrancy characteristic of the Corbières region.
Serving Suggestion
A perfect accompaniment to dishes at any point in or through out a meal, the freshness of the flavours partner sushi just as well as scallops in cream or chicken in a mushroom sauce. Carminal Blanc really comes in to its own though, as a partner for cheese, revealing its original and complex personality perfectly along side the delicate slices of Tête de Moine cheese.
