Rubellis Rouge
Fissured limestone permits deep penetration of the vine roots. Limestone pebbles scatter the vineyards.
The carignan grapes are fermented solus to maximise the rich and fruity character of the grapes. The fermentation process starts off at high temperatures (30 C) and finishes at the much lower temperature of 19-20 C. The de-stemmed Grenache and Syrah grapes are subject to a long cold pre-fermentation period followed by gentle extraction before being left to macerate for 15- 20 days.
The wine is matured in cement vats, which are ideal for maintaining a constant temperature.
Tasting Notes
Deep garnet-red colour with purple reflections.
A mostly fruity nose, but rich and complex : jammed fruits, crystallised fruits, ripe cherry, wild
blackberry and fresh grape.
When aerated, spicy and garrigue notes come to the nose.
Rubellis’s soft structure and freshness make it a delectable wine.
One can already notice on this wine the results of our turn to organic agriculture.
Our search for the right balance between richness, complexity and lightness, makes it a very pleasant and accessible wine to drink.
Thanks to its wide range of aromas, typical of our fresh terroir, Rubellis is a beautiful expression of the Hautes Corbières..

Rubellis is a versatile wine for any occasion but will be particularly good paired with roast duck and grilled meats.
